Sautéed Vegetables & Turmeric Quinoa

Well here we go again; another week, another Monday.

Are you where you want to be? Are you happy?

Or are you drained and exhausted? Are you wishing for Friday already?

What do you want to change? What can you add into your life today that will make it beautiful? What can you do today that will bring you closer to where you want to be?

Here's the thing. Mondays are just another day; but the way that society is organized, it is one of the most dreaded days for many.

But, I like Mondays. They're calm and peaceful and beautiful and magical.

Mondays bring up a lot of emotions. They make us think. Well, they make me think. They make us reevaluate our current situation. We notice if we are stressed, miserable, exhausted, and drained - physically and mentally. We notice the difference in how we feel on weekends compared to weekdays.

I decided a long time ago that I want to wake up freely and do things on my own accord and be my own boss. I decided that I want to help people in a significant way. I decided that I have a message of value to share with the world. I decided that I hate routine because I find it boring. I decided that I'm allowed to have all of these things. I am worthy and I deserve it. Now, I'm creating a life based on how I want to feel. I refuse to get caught up in what is expected of me and do what I want.

Did you know that turmeric is extremely healing and one of the best anti-inflammatory foods? Not only does it reduce inflammation physically, it reduces inflammation mentally, emotionally, and spiritually as well. One of the qualities of turmeric is that it makes us stop and consider what else in our life needs calming.

Adding turmeric into your diet will encourage you to notice your self-worth and to focus on your self-love. When we have love for ourselves, we will no longer tolerate anything that doesn't make us happy. We will no longer tolerate anything that doesn't add value to our lives. We will no longer stay in miserable situations or relationships or jobs. We want balance in all areas of our lives. We want the very, very best for ourselves because know that we deserve it.

It's funny. You would never want the people you love to stay in a situation that makes them unhappy. Yet, for ourselves, we find it so easy to stay in that place of unhappiness. Show the same love to yourself as you show to others.

Last night, I made this random concoction. I didn't want to go to the grocery store, at all. I didn't want to move. But luckily, I had a bunch of leftovers and unused vegetables that needed to be used up.

I think the best recipes happen when you have no expectation in mind and let yourself be intuitively guided. Listen to what your body wants. Listen to what your body craves. Listen, listen, listen.

THE RECIPE: SAUTÉED VEGETABLES & TURMERIC QUINOA

QUINOA:

- 1 cup quinoa

- 2 cups water

- 1 tsp turmeric

- 1 tsp himalayan salt

- 1 tsp black pepper (black pepper and heat allow the turmeric to be absorbed better)

VEGETABLES:

- avocado oil

- 1 zucchini (chopped)

- 1 cup mushrooms

- 1 onion (chopped)

- 1 cup spinach

- 1 cup kale

- 2 garlic cloves (chopped)

- himalayan salt, black pepper, garlic powder, oregano, and rosemary

DIRECTIONS:

1. In medium pot over high heat, bring two cups of water to a boil. Reduce heat and add in quinoa with turmeric, himalayan salt, and black pepper for 7-10 minutes.

2. Prepare vegetables. In frying pan over medium heat, spray with avocado oil. Add in onions and garlic for approx. 5 minutes until onions slightly brown. Add in mushrooms and zucchini until almost cooked. Mix in quinoa and spices. Add in spinach and kale and stir until mixed in. Enjoy!

Note: I only used half of the quinoa because I had this leftover from Friday. Makes 2-3 servings depending on portion size.
